The Pian Castello vineyard is located on a terraced plateau halfway up the hillside, well exposed and completely surrounded by woods. Chardonnay and Pinot Noir have been cultivated here for more than thirty years with clones from Champagne, producing low yields of 50 quintals per hectare. After manual harvesting, the grapes are pressed very softly in whole bunches and the must is sent for fermentation, partly in stainless steel and partly in barriques. After several months of ageing, the base wines are blended to create the cuvée. The subsequent period of bottle ageing on the lees \u003cstrong\u003elasts 36 months\u003c\/strong\u003e before dégorgement.\u003c\/p\u003e\r\n\u003cp\u003eThe Metodo Classico Trento Brut Riserva Piancastello is a refined sparkling wine that well represents the noble Trentino tradition of making labels characterised by \u003cstrong\u003emineral freshness and aromatic richness\u003c\/strong\u003e. Low yields, perfect ripening of the grapes, considerable temperature fluctuations and a long period of ageing are the ingredients that make this Metodo Classico so successful. In the glass, it is straw yellow in colour, with fine and persistent perlage. The bouquet is fine and elegant with floral aromas, fruity notes, hints of pain grillé, vanilla and honey.
