Viticulture can be defined as heroic, since the rows of vines are placed on steep slopes, a condition that forces only manual labor. In the cellar, fermentation is spontaneous thanks to the action of indigenous yeasts in wood; it ages 12 months in oak before being bottled.\u003c\/p\u003e\r\n\u003cp\u003eThe color of Jean-Yves Péron's Mondeuse \"Cote Pelée\" has a brilliant ruby red colour.
